For your reference: a roux is a mixture of melted butter/oil and flour (equal parts typically) that is used as a thickening agent for soups, a sauce starter (for gravy and bechamel -cheese sauce-) and it is dominant in French and Cajun cooking.
1 pkg Barilla One Pot Elbow Macaroni or Penne (or a Barilla Gluten Free option)
3 cups water
4 Tbsp unsalted butter
1 small yellow onion, minced
1/2 cup unbleached, all-purpose flour
2-3 cups milk
2 cups any cheese you liked, grated or cubed
1/2-1 small can fire-roasted tomatoes
salt & pepper, to taste
*If you can't find Barilla pasta, simple choose any macaroni-style pasta you like and cook according to package instructions.
