If you follow us on Facebook, then you know that we have really been rocking the Facebook live video thing. Twice a week, jam-packed videos that teach recipes + new cooking skills. Lynsie is loving this project and it shows! Our viewership increases every week and we at Vie are thrilled with the response. Here are three recipes from Thursday’s 3 Easy Sauces video.
Green Sauce: Chimichurri

Yield 8-10 servings
This sauce is bright, healthy and really easy to make using simple flavor components. Combine and store in the fridge for a fresh condiment to help bring any dish to the next level. Serve over steak, chicken or fish, add to soups or add oil for a delicious vinaigrette!
Ingredients
1 bunch cilantro, rinsed thoroughly
1 bunch parsley
1 pinch red pepper flakes
½ lemon, peeled and seeds removed
1 tsp lemon peel
2 cloves garlic, whole
¼ yellow onion
½ cup water
½-1 tsp salt, to taste
Instructions
In the bowl of a food processor or blender, combine all ingredients and pulse to break up large pieces.
Once well-combined, continue blending until smooth.
Taste and adjust seasonings as needed.
Remove all but ⅓ cup of sauce to a container with a lid and store until ready to use.

Red Sauce: Cantina-Style Salsa

Even better than your favorite cantina-style salsa! We use fire-roasted tomatoes and chipotles to create a subtle smokiness that enhances any meal. Of course, it’s perfect for dipping, too. Adding in 1/3rd cup of reserved Chimichurri Sauce also brings in a nice amount of fresh raw greens, which definitely works to boost the health factor on this already light condiment.
Ingredients
1/3rd cup Chimichurri Sauce
½ lemon, peeled and seeds removed
3 cloves garlic, whole
¼ yellow onion
1 28-oz can fire-roasted tomatoes
½ tsp salt, to taste
1 chipotle in adobo sauce, whole

Chipotle Aioli or Red Crema

Aioli and Crema sauces are huge right now and there’s no reason why you can’t make your own at home. Using 1/3rd cup reserved Red Sauce helps to liven up the flavors and cut the richness of the mayo or sour cream. Add more or less of each to thicken or thin out your sauce. This condiment is perfect for drizzling over fish tacos, rice or roasted potatoes.
Ingredients
1/3rd cup Red Sauce
2 cloves garlic, whole
2-4 cups mayo*, depending on desired thickness
½ tsp salt, to taste
1 chipotle in adobo sauce, whole
*Equal parts sour cream can be substituted for a Red Crema instead
Instructions
In the bowl of a food processor or blender, combine all ingredients and pulse to break up large pieces.
Once well-combined, continue blending until smooth.
Taste and adjust seasonings as needed.
Drizzle over tacos or fish/meat or use as a dip for tortilla chips and veggies.
