Today we are branching away from our normal chatter. Being that we are a startup based in Charlottesville, VA, we believe that local food, agriculture and sustainable living are all integral parts of not only who we are but also what gives Vie an edge.
Beginning in the early summer, we will begin our seasonal Farmers Market Meal Plan for our second year. We cannot wait to share ideas for meals + shopping lists that our subscribers can use at their local Farmers Markets and in conjunction with their CSA’s.
In preparation (and anticipation) of this seasonal Meal Plan, we’re going to take you in the garden today at Vie HQ! Filled with 32 cedar raised beds, our garden has a gorgeous view of the Blue Ridge Mountains and Wine Country! We’ll walk you through our spring garden (and show you what we have left to prep) and offer a video demonstration of what we’re planting now (peas, lettuce, etc.) and how you can plant these same veggies at home just in time for a spring/summer harvest. Since today’s live video tutorial won’t include our typical cooking demo, we’ve decided to include an old favorite seasonal recipe that we are rotating through our spring Meal Plans over the next few weeks. SIDE Sugar Snap Citrus Salad

This salad is not your average spring salad! It packs punch with the tangy-ness of the citrus and the crunchiness of the raw, julienned sugar snaps. We hope you love the colors and flavors...
Ingredients
1 lb sugar snaps, sliced into strips lengthwise (julienne, think matchsticks)
2 oranges, 1 zested & juiced, 1 peeled and cut into segments
1 lemon, juiced
1 shallot, minced
1 Tbsp honey
2 tsp toasted sesame oil
1 tsp soy sauce
1 pkg bibb lettuce or baby bibb lettuce
Instructions
- Toss sliced sugar snaps with orange juice and orange segments, lemon juice, shallot, honey, sesame oil and soy sauce.
- Serve over a bed of bibb lettuce.
