I don’t know about you, but being brought up in the 80s, Fig Newtons were just about my favorite thing. Perhaps it was the crunch of the fig seeds? Or the soft, delectable vanilla-flavored crumb coating. When I owned a bakery (what feels like eons ago) I made this from scratch for my customers!
Now I’m bringing my mom {and chef} know-how to a new riff on this delicious recipe, only this time making it waaaay healthier, while still maintaining those flavor components that we all love.
Meet the Fig Newton Power Ball.
With power, or energy, balls, the trick is getting the consistency of the paste right while at the same time adding loads more good-for-you stuff. With today’s recipe, we managed to fit in not only figs, but dates, flax, coconut oil, and oats. We create the paste, shape into balls and roll them in pureed graham cracker dust, which, if I’m being honest…is pretty much the closest thing to a processed Fig Newton bar that I’ve ever stumbled upon. Yay for happy accidents, and nutritious snacks that take 10 minutes to make and cost $0.25 cents/ball.
Now that’s what I’m talkin’ about folks!
We hope you enjoy this recipe and video. Once you make these at home, snap a photo and let us know how they came out. - Next, poor graham "dust" into a bowl for coating.
- In the same food processor with the very same blade, add all of your other ingredients and pulse/puree until a fine paste forms.
- Shape paste into quarter-sized balls using a small cookie scoop (or watch our video to see what we did with what we had on hand).
