MAIN Shakshuka (eggs poached in smoky tomato sauce)

Yield 4-6 servings

A Middle Eastern dish, the smoky tomatoes and sweetness from the sugar work together to create a dish that is part sauce, part stew.  Feel free to play around and add more greens, extra beans, or even tofu in place of eggs to make this dish Vegan.

Ingredients

1 yellow onion, diced

6 cloves garlic, minced

2 carrots, diced

1 stalk celery, diced

1 Tbsp olive oil

1 tsp each salt and pepper

2 Tbsp paprika (smoked or regular)

2 tsp sugar

1 tsp chili powder

2 cans fire roasted tomatoes 

eggs (as many as you like) 

½ bunch dill, rinsed and chopped

½ bunch parsley, rinsed and chopped

Rice (optional--make a big batch at the beginning of the week and use throughout)
