Buffalo Chicken Bites over Shredded Carrot+Celery Salad
wings with a twist. I particularly like the refreshing addition of the shredded carrot+celery salad with blue cheese dressing. At least it’s a great reason to go back for seconds, right??
I bring this to many a picnic or tailgate. Why? It’s easy, quick, can be made ahead and always taste refreshing and light. Oh, and it doesn’t need refrigeration for a few hours, so go ahead and throw it out on that tailgate table and worry no more.
Salsa in a bowl…and eaten as soup. Ok, so that didn’t come out exactly as well as it sounded in my head, but the theory is the same: gazpacho is grown up salsa, that is eaten out of a large bowl and served well-chilled. This recipe incorporates roasted green Anaheim chiles, which lends it a nice mellow hatch chile-like flavor. I love the bright green color, too! Not your average gazpacho…
Charred Sweet Baby Peppers with Vegan Chipotle Ranch Dip
This one can be made ahead and could not be easier! If going Vegan, make sure to use a ranch packet that does not contain milk.
