This past Friday we were asked to make a few dishes that represent what we are all about at Vie for our friends Ann & Jason Dunn of Formula Complete Fitness. They were celebrating the Grand Opening of their new niche running gym and we were so happy to be a part of this huge moment for them!
We made three salads that are fantastic fall dishes: healthy, light, sweet & tangy. The recipes for these will be featured in our Meal Plans this week!
Here’s what we made:
Curried Farro Salad with Roasted Butternut Squash, Raisins and Toasted Almonds
Wile Rice & Greens with Orange-Poppy Seed Dressing, Apples and Pépitas
Roasted Corn, Pepper & Black Bean with a Cilantro Lime Vinaigrette
They were a hit. I even heard tell that some of the last to leave might have been licking the empty bowls…
The rest of the yummy appetizers were provided by our friends at Feast! Ann & Jason definitely have good taste.
