Have you ever wanted to make your own Caesar Dressing?
Lynsie here and I’ve got some great news!
I know that when I’ve either purchased Caesar Dressing at the store or had it on a salad out at a restaurant, I am slightly dubious. I’ve heard the rumors: it’s filled with calories, and potentially with a lot of preservatives. Well, learning how to make your own can help you better manage the ingredients that you add while still making a dressing that is healthy, delicious and multi-purpose!
Let’s go over the basics…
Typical Caesar Dressing has the following ingredients as baselines:
- hard-boiled eggs
- mayo
- anchovy paste
- garlic
- salt + pepper
- lemon juice + zest
- parmesan cheese
But why not take those baselines and work to create something new? Today we’ll use the following:
- hard-boiled eggs
- Greek yogurt or tofu
- anchovy paste
- miso paste
- garlic (lots)
- basil pesto
- salt + pepper
- lemon juice and zest
- red pepper flakes
- parmesan cheese

Vie Caesar Salad Dressing
Yield 20 oz

Ingredients
3 hard-boiled eggs
1-2 lemons, zested and juiced
1 pint Greek yogurt or 1 block silken tofu
2 Tbsp anchovy paste
2 Tbsp miso paste
4 cloves garlic, whole and peeled
2 Tbsp basil pesto
1/2-1 tsp salt and pepper (start with a little, remember you can always add but not take away)
1 pinch red pepper flakes
1 cup parmesan cheese
Instructions
- Combine all ingredients in a blender, puree until smooth and store in the fridge until needed. If consistency is too thick, thin with a Tablespoon or two of water.
- Don't forget to taste and adjust seasonings as needed!
